The Food Hygiene Rating Scheme used in England and Wales takes into consideration three important aspects of each food-related business and its operations: hygiene, structural and management.

Inspectors found that major improvement was necessary in two areas. The first was hygienic food handling including food preparation, cooking, re heating, cooling and storage. The second was the management of food safety which includes system or checks in place to ensure that food sold or served is safe to eat, evidence that staff know about food safety, and the food safety officer has confidence that standards will be maintained in future.

The report also found that improvement was necessary in the cleanliness and condition of facilities and the building including having appropriate layout, ventilation, hand washing facilities and pest control) to enable good food hygiene
